The change and growth of Waterloo International Airport is expected to keep happening because Stockyards will soon be in charge of the food at the restaurant.
Waterloo Region says the company, which operates several local restaurants, has started building Stockyards at YKF, and it will open next spring.
Karen Redman, the chair, stated, “This partnership with Stockyards will further improve the passenger experience at YKF as we keep investing in our airport.”
“We are excited to welcome Stockyards, a company with strong local connections, and are eager to see what comes next as we keep growing.”
A spokesperson for the region confirmed that the new restaurant will replace the current food choices at the airport.
The company plans to offer a licensed seated dining area as well as grab-and-go options and retail merchandise.
The region says Stockyards will create a YKF-branded coffee and beer and make “an affordable menu, powered by very local farm-to-table suppliers.”
Ignite, the company that owns Stockyards, also owns Graffiti Market and the Rich Uncle Tavern in Kitchener as well as Crowsfoot Smokehaus in Conestogo.
“My connections to this community are deep,” said Ryan Lloyd-Craig, chief operating officer of Stockyards. “I have lived in Waterloo Region for a long time and have seen YKF change from a flying club to an international airport.”
The company also has another brewery being built at the St. Jacobs Market.
